Heya everyone and welcome to my very first but definitely not the last of my line of Lifestyle Columns exclusively found here on clairelizzy.com!
In this column, I will talk about the path less beaten in the beautiful internationally recognized Jasper National Park. I recently traveled here for an astounding vacation filled with fun, food and adventure! And all the pictures used in this column are taken by me on that awesome trip!
Neato!
If you're looking for a fun, easy activity to do while outside in the beautiful Jasper sun, paddle boarding at any of Jasper's beautiful lakes, including Maligne, Beauvert and (my personal fav) Lake Annette.
You can bring your own paddle board and equipment that comes with it, or you can rent one at any of Jasper's sport and fishing outlets.
Enjoy the beautiful scenery as you paddle picturesquely upon the shimmering surface of the lake, whichever lake you so hope to visit, as Jasper has a great many.
Paddle boarding is extraordinarily and when I visited Jasper a while back was the first time I ever paddle boarded. I was unsure whether I would fall in or not, but I immediately felt comfortable with the paddle in my hand and standing up on the board within fifteen minutes!
It's a very easy sport for beginners and experts alike, and I hope you will try it yourself someday.
Jasper is a gold mine of natural wonders, and what better to enjoy them when you can stay the night at one of their great campgrounds!
The campground I lodged at was Snaring Campground on the banks of it's same-named river.
The best thing about the Snaring Campsite is it's beautiful scenery and large sites with interconnecting paths that link the whole campground.
Our site we got was right beside the river and had amazing views of the surrounding mountains.
Our campsite was the location of many fun-filled nights and dinners by the roaring campfire.
The picture above is a delicious pulled pork sandwich with coleslaw, beans and a tangy and tasty pickle spear that I ate while lounging in my camp chair at my site!
There are many beautiful places to go gaze upon scenery in Jasper, but not all of them are related with an awesome story!
One that is, however, is Mount Edith Cavell!
Take a beautiful scenic tour through the mountains and embrace the peacefulness of it all before stopping at this awesome mountain named for one AWESOME Edith Cavell.
Edith Cavell was an English nurse during the First World War who aided wounded soldiers. The mountain is named in honour of her.
There is also a large hiking trail that will take you through the wilderness around this beautiful mountain! Cool!
If you're feelin' hungry, but not for a full-blown meal, perhaps a small but packed-with-flavour treat, the Bear's Paw is the go-to option for you! The delicious home of many tasty treats, the Bear's Paw has a wide range of cakes, pie, cookies, pastry, beverages and even savoury snacks like their Spicy Sausage Rolls and sandwiches!
It is a local favourite and in my opinion, one of the crown jewels of the Jasper Townsite!
I'd recommend the Monster Cookie, a cookie that is the size of your face and is packed chock-full of candy-coated chocolates!!
Dalgona coffee. Cold milk topped with a frothy, espresso-type foam. Sounds good to me! But what I'm wondering is why is this decadent drink so popular?
To anyone whose new to this craze (like me, I haven't even taken a sip of Dalgona yet! lol), it originated when a popular South Korean actor tried some whipped coffee while at a cafe in Macau and said that it reminded him of a sweet treat from his home country known as Dalgona.
A craze was born!
The new drink quickly spread to the short-form video-sharing site TikTok, where it blew up and now is a global phenomenon.
Now, if you have never had Dalgona Coffee and would perhaps like to try it one of these days, here's a recipe for this global phenonemon!:
Dalgona Coffee!
Ingredients:
-4 tbsp. granulated sugar
-4 tbsp. instant coffee
-4 tbsp. cold water
Milk, for serving
Ice, for serving
Cinnamon powder, for serving (optional)
__________________
Directions:
1. In medium bowl, combine the sugar, coffee and water and whisk vigorously with a whisk or with a hand mixer until it turns silky and smooth and then continue until it holds it's foamy shape.
2. In a cocktail shaker, combine the milk and ice and shake for 15 seconds.
3. Pour the cold milk into a small clear glass (so you can see the swirls!) and dollop and swirl the coffee-sugar-water mix on top of the milk, and if using, sprinkle the cinnamon on top!
4. Dig in! You have officially become a trendsetter!
Note: Original Dalgona recipe I adapted from can be found on https://www.delish.com/.
Variant:
Peanut Butter Chocolate Dalgona Coffee!
Use the regular mix you made with the coffee, sugar and water, and at the end of the whipping, add 1/2 teaspoon of cocoa powder and a dollop of peanut butter and stir once.
After pouring the milk and dolloping the dalgona on top, sprinkle the drink with some mini chocolate chips or Reese's Pieces and boom! You have yourself a PB&C Dalgona Coffee Treat!

Your veggies don't need to always be raw, steamed or sauteed! Turn on the 'ol Q and grill them up, along with burgers, steak or chicken!
Those boring store-bought rotisserie chickens? You can easily make classic taquitos by wrapping the chicken in a flour tortilla and frying until golden and crisp. Chocolate milk from the 'mart? Boil and add caramel sauce to make a caramel hot chocolate!
Feeling adventurous? Try to make food from a different country! You never know, you might like it. You can also put bold global flavours in your classic dishes, by adding a sprinkle of curry powder to roasted chicken, or drizzle some chili paste on broccoli. Yummo!
Sometimes it's good to just have a day full o' sugar. You can dress up even the most sweet desserts with powdered sugar, sprinkled on top, a drizzled chocolate glaze or a streusel on top of muffins or scones.
Once, my family and I were out camping, and we discovered that we had some leftover potatoes, peppers and sausages. We didn't know what to do with them until an idea took hold of my dad. He scrambled some eggs, threw the leftovers in, and behold, Rocky Mountain Scramble. It was absolutely delicious, and probably became one of, at least MY favourite breakfasts.
Imagine this, sitting out in the wilderness, the morning rising over you, and a big plate of Scramble in your lap. Sounds like the perfect camping trip to me.
Ahh, it was the perfect morning. We were so excited to have a nice plate of toast, eggs and crispy bacon. We were sitting at the table, waiting for the bacon to finish cooking. It had. The bacon was badly burnt.
Dad had to put the bacon on our plates, run outside and put the pan in the snow before it burnt down the house. Ahh, breakfast.
Chili is a family favourite, and it was a night like any other. Dad was doing the cooking of it. We like to add some spice into our chili, in the form of chili powder and cayenne pepper. We add lots of chili powder, as it's not very spicy, and a tiny bit of cayenne, as it can burn your face off.
Dad didn't know that yet. We took one bite and considered going for some fast food, which we did. Gotta love spice!
We can all be a little clumsy sometimes, and trust me, I know that better than anyone. We were getting ready for dinner, and I was setting the table. I was bringing the plum sauce over to our table when it slipped out of my hands.
The container punctured, and started pouring down the register, and I was just standing there, in panic, completely frozen, not knowing what to do. We eventually got it cleaned up, but the experience still haunts me until this very day.
(Picture note: plum sauce goes with spring rolls, right?)
